Depending on availability, seafood products arrive at our restaurant in cold chain at -20° or +4°, except for mollusks bivalves, which are always alive and viable at the time of purchase. In any case, carpaccio or tartare to be eaten raw, have been restored in accordance with Reg. (EC) 853/04 all. IlI sec. VIII, ch.3, letter D, point 1 and subsequent amendments and additions.
